About the Sausage: 'Nduja is a spicy, spreadable pork sausage, known for its fiery taste and versatility as a spread or ingredient in various dishes. 'Nduja is a salume (cured meat) from the Calabria region of Italy, specifically the area around Spilinga. It's made with pork trimmings, fatback, and sun-dried Calabrian chili peppers, which give it its characteristic fiery flavor. It is soft and spreadable with a dark red color and is finely ground but slightly textured. The flavor is spicy and savory, reminiscent of chorizo, but with a distinct Italian flair.
